Vegan Week in review

Last week, Mrs. Wookie and I decided to go vegan.
And I thoroughly enjoyed it! It was hard for the first 3 days or so, but after it was quite easy.

I have never spent more time reading labels in my entire life. These ingredients weren't out of the norm for me to buy anyway like tofu, I already like tofu.

Ingredients for fried rice.

First time trying "Dave's Killer Bread". It was good and it's local.
The hummus was killer as well.

My lunch one day.
Hummus on toasted bread and pineapple.

Fried brown rice with mushrooms, shredded carrots, asparagus, and bean sprouts.
You have NO idea how long it took me to find an Asian sauce that was not only Vegan, but healthy!

The "soup" I con-cocked one night.
Boiled the Vegan raviolis in vegetable broth, when they were about half cooked I added shredded carrots and cabbage and mushrooms just so they would cook a little. It reminded me of egg flower soup but with out the eggs and "murky" broth.

Vegan pizza. TheWhole Foods crust was very good! This one was margarita pizza and we made another with Vegan pepperoni, olives, and mushrooms. The "pepperoni" was really good! I was surprised. The only thing that wasn't the best was the cheese. You can just tell it's not actual cheese and it has a weird texture. You can also tell from the photo above that it doesn't really melt. But, we ate it for the experiment.

There are a lot of things a person can take away from being Vegan. I feel like most Vegan are fit and healthy because they put fruits and vegetables first as staples in their diet. I definitely will have some Vegan tendencies even if I am indulging in the occasional animal.

Saying "no" to heavy, cream-based sauces, avoiding extra cheese on salads, sandwiches, burgers, and what not.
Going Vegan was a great way for me to get over my weight-loss plateau because it shocked my body, like they say to do with exercise.
I also felt like I had more energy and running was easier. It makes sense though, you're obviously going to feel lighter when running if you eat a salad and fruit as opposed to a steak.

When I hit my next plateau, I'm definitely going Vegan again. It's hard to do but it works!
